Buffalo Mozzarella

The story

Unlike the stretched-knot method used for cow's milk mozzarella, buffalo curd is set and simply broken into the whey by hand. It makes a moister, softer cheese with a shorter life, which we think is the correct trade.

Use it within four days. It is a fresh cheese and pretending otherwise does it no favours.
