Cultured White Butter

The story

Cultured butter is churned from soured cream rather than pasteurised sweet cream. The culture adds a lactic tang that survives the churn, and the milk solids are higher, so it browns better and tastes of more.

Our cream is soured for six hours at 22 °C before churning, and the butter is worked slowly enough to keep the water phase separate.
