Daily-Set Paneer

The story

We set paneer with a live lactic culture and let it stand twelve hours before pressing. A twelve-hour set gives you the crumb that khoya-style paneer is prized for; a four-hour set gives you the uniformity most people think they prefer, and which we find less interesting.

This is a short-shelf item. Treat it as fresh dairy, not as a packaged good.
