Philosophy

Do not make it look better than it is

Homogenisation makes milk look uniform. It does not make it better. Every stage of ORVIA DAIRY is chosen for what survives the customer rather than what photographs well: unhomogenised so the cream rises, cultures instead of preservatives, curd set long enough to actually develop. We would rather sell less milk than sell milk that has been made to look like something it is not.

Milk

Full-cream milk from grass-fed Gir cattle.

Non-homogenised, poured within six hours of milking. The cream rises to the top of the bottle as it should, because nothing has been forced through a fine nozzle to keep it in suspension. Our Gir herd grazes on open pasture in the Gir Forest region and is milked twice daily. Every bottle is traceable to the morning it was filled.

Paneer

Set fresh each morning from our own milk.

Curdled slowly with a live lactic culture and pressed by hand, which is why the texture is irregular rather than uniform. Traditional khoya-style paneer, set in-house every morning before 7 am. Sold loose by weight, not vacuum-sealed, so the crumb stays as it should.

Butter & Ghee

Cultured butter and ghee made from cultured milk solids.

We churn cultured cream rather than sweet cream, which is the traditional method and takes about twice as long. The result is a deeper flavour and a cleaner ghee. The ghee is clarified in-house from the same cultured butter, in small batches.

Cheese

Aged hard cheeses, ripened in our own cave.

Made in small vats with a cultured curd, then aged on wooden boards in a naturally temperature-controlled cellar. Long maturation concentrates the flavour and changes the texture entirely. Each wheel is stamped with the date it was cast. Take the hint.
